The new Pastry Chef unveils an artistic creation for his first Christmas at the Palace!
This year, the Pastry Chef Yazid Ichemrahen, accompanied by his Executive Chef Alexandre Favre, designed a Yule Log in tribute to the Palace, jewel of elegance in the heart of the City of Light.
A bit of history to start…
The legendary Red Marquise is an ode to the identity and soul of the Palace of the Hoche Avenue. According to the stories, the Marquise was a noble and mysterious woman who lived in a luxurious Suite of the hotel, always dressed in red, color symbolizing her passionate temperament and unequalled beauty. However, it remained elusive and secret, as is the Palace today.
This legend inspired the designer Philippe Starck to restore the iconic Red Marquise overlooking the entrance of the Palace during the 2010 renovation, making it an iconic symbol of the establishment. Although the Marquise’s real existence remains open to debate, her story continues to fascinate and contributes to the mysterious aura of the Palace.
A gourmet creation born from this story…
Arrived at Le Royal Monceau – Raffles Paris in April 2024, Yazid and Alexandre, who are passionate about history and architecture, have immersed themselves into the archives of the Palace to learn about the fascinating story of the Red Marquise and the elegant design that corresponds to her. That is how they created a Yule Log that has a meaning for them: their first as Pastries Chefs of a Palace.
After many trials, they have resulted in a creation that is both sophisticated and artistic, reflecting the atmosphere of the most contemporary of the Palaces. Their ambition: to combine architecture and pastry to offer a true work of culinary art.
A harmony of flavors and nuances…
Le Royal Monceau – Raffles Paris’ Yule Log is a magnificent balance between tradition and modernity decorated with a soft chocolate color. The whole is sublimated by a finely worked chocolate decor, with in the center a silver medallion proudly overhung by the logo of the Parisian Palace, symbol of prestige and savoir-faire.
The marquise, worked like wrought iron, seems to levitate on the glaze, in order to value this symbol of unique architecture and elegance of the hotel.
Concerning the flavors, the Yule Log reveals a gourmet universe where textures and tastes are intertwined in perfect harmony. A chocolate biscuit serves as the basis for an airy chocolate mousse infused with farm milk, scented with Christmas spices, wrapping a heart of caramel and praline. Every bite is an invitation to rediscover the essence of the Christmas Holidays.
